How to Cook Edikang Ikong Soup ( Edikaikong Soup )

edikaikong soup

The Nigerian Edikang Ikong soup or simply Vegetable Soup is native to the Efiks, people from Akwa Ibom and Cross River states of Nigeria. It is a general notion that the Edikang Ikong soup is very nutritious and this is very much so. Prepared with a generous quantity of pumpkin leaves and water leaves, this Nigerian soup recipe is nourishing in every sense of the word.
It is common for Nigerians to request this soup recipe after a bout of illness as we trust it to replenish whatever was lost during the sickness. But you don't not need to be in a state of convalescence to enjoy this wholesome Nigerian food recipe.
Ingredients for Edikang Ikong Soup
  • 1kg Pumpkin leaves
  • 500g Water leaves
  • 600g Beef, Kanda, shaki and Dry fish
  • Pepper, Salt and ground Crayfish: to taste
  • 200ml Palm oil
  • Periwinkle - 1 cup
  • 2 medium bulbs onions
  • 2-3 Stock cubes
Alternative vegetables for those who cannot buy water leaves and pumpkin leaves:
Use the following to replace the classic Nigerian vegetables for this soup:
  • 1kg Normal Frozen Spinach
  • 200g Ground Frozen Spinach
  • 250g Lamb's Lettuce (Canonigos in Spanish)
Defrost the frozen spinach, cut the normal frozen one into tiny pieces and mix with the ground frozen spinach. Wring out the water from these and add them when I add the pumpkin leaves.
Wash pick and cut the Lamb's Lettuce into tiny pieces. Add them when I add the water leaves.
Before you cook the Edikaikong Soup
  1. Wash and cut the pumpkin and water leaves into tiny pieces. Put them in separate sieves to drain out all the water as much as possible.
  2. Cut the Kanda into small pieces. Cook the beef, kanda and the dry fish with the 2 bulbs of diced onions and the 3 Maggi / Knorr cubes with as little quantity of water as possible.
Cooking Directions
  1. When the meat is done, add a generous amount of palm oil, the crayfish and pepper and leave to boil for about 10 minutes. The palm oil serves as water in the Edikaikong soup. You should try as much as possible to make it the only liquid in the soup.
  2. Add the periwinkle and water leaves and leave to cook for another 5 minutes. You may have to cook for less time at this stage so that the water leaves are not over-cooked.
  3. Now add the pumpkin leaves and salt to taste. Stir the contents of the pot very well and turn off the heat. Cover the pot and leave to stand for about 5 minutes.
  4. The Edikang Ikong soup is ready to be served with Garri (Eba), Semolina, Amala or Pounded Yam.

Nigerian Salad Recipe

Nigerian Salad also known as ''Nigerian mixed vegetable Salad'' is one of the richest salad recipes you can ever find. It is prepared with more than five vegetables, combined together and enriched with the classic Baked Beans and Cream.
Believe me, this Salad is not complete without Baked Beans and Cream(or mayonnaise). So make sure you have these two ingredients at hand, if you really want to get the original Nigerian Salad.

Ingredients:

nigerian salad ingredients , Nigerian Salad, Nigerian Salad recipe, nigerian food recipe, nigerian food, nigerian food tv
- 5 medium sized Carrots
- 1 medium bunch of Lettuce
- 1 medium bunch of Cabbage
- 2 Handful green Peas
- 4 Medium sized Tomatoes (hard tomatoes)
- 3 pieces of Irish Potatoes
- 2 pieces of Cucumber
- 4 Eggs
- One tin of Baked Beans in tomato sauce  comes in a 415 gram can)
- 300g of Sweet Corn (2 small tins)
- A bottle of Salad Cream  or Mayonnaise
(Nigerian salad is usually served with Heinz  original Salad Cream, and comes in a bottle, but here in Spain, it is sold in a plastic bottle. In the absence of this, Mayonnaise or condensed milk can also be used)

It is very common to see extra ingredients added to Nigerian salad, such as corned beef, onions, canned red beans, boiled macaroni, green bell pepper and a lot more. So feel free to experiment with more or less.

Preparation:

Before you start with the  Salad

-Wash all the vegetables separately in sufficient water (add a spoonful of vinegar, baking soda or lemon juice to the water to help kill harmful bacteria) . Rinse thoroughly in fresh water.

- Boil the green peas for 2 minutes, strain it out and using the same pot, boil the eggs and potatoes together, the potatoes might cook before the eggs , so take it out when it is done and let the eggs boil until hard boiled.
Set the peas aside for later use.
Peel of the egg shells and slice the eggs as thinly as you can.
Peel of the skin of the boiled potatoes and cut into small cubes.

- Slice the cabbage into tiny strips, then wash again and strain to remove excess water. Set aside for later use.

Tip: (the cabbage might store ants or pesticide in its leaves, that's why it needs to be washed again after slicing) .

- Slice the lettuce into thin shreds.
(make sure you washed  each leaf thoroughly, before use)

- Scrape the carrots and shred with a grater . Set aside for later use.

- Scrape off the green skin of the cucumber, cut into two equal halves , remove the seeds(you can eat it if you like) and then cut into small cubes. Set aside for later use.

- Cut the tomatoes into two halves, remove the seeds and cut into small cubes. Set aside for later use.

- Open the can of sweet corn, pour into a sieve to strain out the preservation water. Set the corn aside for later use.

- Open the can of  baked beans, pour into a small bowl and set aside for later use.

Now that you have all the ingredients ready, it's time to put them together.
Nigerian Salad, Nigerian Salad recipe, nigerian food recipe, nigerian food, nigerian food tv
1. Get a large salad bowl and place the vegetables in the bowl, layer by layer until there's nothing left.

2. Place the sliced eggs on the prepared salad, and also spread the baked beans.
(Note: even though baked beans is symbolic to Nigerian salad, not everyone likes it in their salad, so it's better to serve it on demand)

 3. Now, cover the salad bowl and chill in the fridge until needed.

4.  Finally serve with the salad cream(or mayonnaise) and Enjoy.

Nigerian salad is usually served as an accompaniment for Jollof Rice, Fried Rice and other Nigerian rice recipes. It can also be eaten alone or served with bread as a sandwich.

Nigerian salad like most raw vegetables can be preserved in the fridge but will only keep for 24 hours. So eat it while it's fresh and enjoy
☺.

Mama G, Aki, Mercy Aigbe, Others March For Kidnapped Schoolgirls

In a bid to add their voices to the call for the release of hundreds of schoolgirls kidnapped by Boko Haram insurgents in Chobok, Borno State, some Nollywood stars led by Patience Ozokwor, popularly called Mama G, on Thursday staged a rally in Lagos, western Nigeria.
NAN reports that the actors, which included Chinedu Ikedieze, popularly known as Aki, Ejiro Okurame, Mercy Aigbe, Femi Ogedengbe, Thelma Okaz and Tony Akposhere, marched from Allen Avenue to Alausa Secretariat soliciting for the release of the abducted school girls.
It could be recalled that the Boko Haram insurgents kidnapped no fewer than 276 schoolgirls at the Government Girls Secondary School in Chibok, Borno State on 14 April, 2014.
More than seven weeks after the terror attack, the Islamist militant group are yet to release the girls claiming they would only swap them for their members captured by the Nigerian military.
While demonstrating earlier today, the Nollywood actors said the march was their own way of celebrating the Democracy Day because they were unhappy that the kidnapped school children were still being held by the Boko Haram sect.
The actors, who marched with various placards with various inscriptions asking for the release of the girls, were addressed by the Speaker of Lagos State House of Assembly, Mr Adeyemi Ikuforiji.

The speaker also assured them that government was doing its best to get the girls released, while also promising the actors that he would take their request to the government.

See The 20-Year-Old Who Did Not Grow Longer Than 30 Inches Due to Rare Condition

The-16-Year-Old-Baby

Most parents worry about the same things with their teenage children – such as good grades and staying out of trouble – but such typical concerns were not afforded for the Greenberg family of Maryland in the United States.
In 1993, they welcomed their third daughter, Brooke, into the world and were happily raising her until they realised that she had not grown in four months.
Brooke suffered from a condition so rare that doctor’s have simply named it Syndrome X because so little is known about it.
Syndrome X halts the ageing process, preventing Brooke from growing any larger than a small baby.
Throughout her life, the tiny teenager never weighed more than 17lbs or grew longer than 30 inches.
The Greenberg family struggled to get answers from the medical community – who were completely baffled by Brooke’s unusual illness.
“I do feel sad when I see kids the same age as Brooke,” said mother Melanie in tonight’s Channel 5 documentary.
“When I see where they are and what they’re doing every day.”
While Brooke defied the lifespan given to her by most experts the family consulted, she passed away last year at the age of 20.
“We just want to go on and live our lives,” adds dad Howard.
“And remember our daughter.”
Despite her sad passing, the infant’s unique DNA has potentially given Florida microbiologists a breakthrough insight into the study of Syndrome X which could allow the development of future treatment for the condition.

I’m Tired Of Keeping My ”Thing” Until After Marriage

I’m a 25 years old lady. Growing a good relationship has been a daunting challenge for me, it just won’t last. Sometimes my fellow ladies take him from me or lack of sé’x causes our separation even after letting him know from the beginning that I am totally for a no sé’x before marriage relationship. At first they would accept only to walk out when I have fallen in love.

Some of these men have been good to me but sé’x is the only barrier. Some said I’m too rigid. I have really worked on my character because at some point I thought I was lacking some good morals. My friends always advice me that sé’x keeps relationship going.

But I want to know, can’t one have a healthy relationship without sé’x?
As a vir-gin, if I desire for a man’s affection, is it wrong? I really need advice because I’m heart broken now. And I’m beginning to have a rethink on my determination to keep “my thing” until after marriage.

Emir of Uba, Alhaji Ali Ibn Ismaila Mamza

The Emir of Gwoza, Alhaji Idrissa Timta has died after an ambush by suspected gunmen.
Late Timta was waylaid together with  the emir of Uba Alhaji Ali Ibn Ismaila Mamza while on their way to Gombe today.
Competent security sources confirmed that the Gwoza emir is dead.
Some sources said he died of heart attack while fleeing into the bush after the gunmen had fired several gun shoots at their vehicle which forced it to stop.
“Already, arrangement is being made to bring his corpse to Gwoza from Shafa. His corpse was found in the bush,” a source said.
The emir of Uba, who is said to be younger had escaped while many of the people in their entourage have been reportedly abducted by the attackers.
It was gathered that most of the vehicles in the convoy have been set ablaze.

Earlier..
Latest story from Uba Emirate indicates that the emir, Alhaji Ali Ibn Ismaila Mamza has narrowly escaped.

One of his in-laws confirmed to Daily Trust that  he spoke with the emir by phone who confirmed to him that he was ok.

However, there is no certainty on the where about of Emir of Gwoza, Ahaji Idrissa Timta.

It was gathered that the two of them were in the same car when the suspected gunmen ambushed them.

“The vehicle was repeatedly shot at while the driver was making endless efforts to flee. When the vehicle could  no longer move, the two monarchs opened the doors and fled into the bush,” a palace source in Uba, said.

But a source in Gwoza said “We are yet to hear much information on the state of our emir…we are confused,” he said.

Earlier in the day ....

Two first Class monarchs in Borno State, including the Emir of Gwoza Alhaji Idrissa Timta and the Emir of Uba,  Alhaji Ali Ibn Ismaila Mamza have been kidnapped by gunmen today.

They were on their way to Gombe State for the funeral prayers of the Emir of Gombe Alhaji Usman Shehu Abubakar
A top security source in Borno State confirmed the development but asked  not to be named, pointing out that he was not the right person to make formal announcement on the issue.
Sources close to the two palaces said the monarchs were forcefully whisked away by heavily armed men who intercepted their convoy in Zur village near Shafa in Hawul local government of Borno State.
Another first class monarch, the emir of Askira, Alhaji Abdullahi Ibn Muhammadu Askirama reportedly escaped being kidnapped. He was said to be in Abuja while his representative barely passed the scene of the kidnap when the emir of Gwoza and that of Uba were intercepted.
“We are in a sober mood now in Gwoza because our royal father has been taken away by gunmen…we don’t know who they are…may be members of the Boko Haram,” Mohammed Sanusi, a source in Gwoza said.
Another source from Uba said they got confirmation from security sources that their emir was taken away.
It is not yet clear if members of  their entourage were also taken away.
“Not a single vehicle in the convoy is back…not even the policemen,” the source in Uba said.
Boko Haram insurgents have abducted 276 girls in Chibok on April 14th and only few of them returned.
Both Gwoza, Chibok and Uba are in southern Borno where the Boko Haram fighters have overrun many villages and hoisted their flags.

Sale Of The L.A. Clippers For A $2 Billion

Breaking: Sale Of The L.A. Clippers Agreed For A Bid Of $2 Billion

According to ESPN, Los Angeles Clippers owner Donald Sterling has allowed his team to slip from his fingers, with a winning bid of $2 billion from an investment group led by former Microsoft CEO Steve Ballmer.

Sources tell ESPN that the deal will be going straight to NBA’s offices for approval with no further permission needed from Donald Sterling.

Of the three bids considered on Thursday night, Ballmer’s was by far the most substantial. The other teams of investors — one led by Tony Ressler and Bruce Karsh and the other by David Geffen — offered $1.6 billion and $1.2 billion, respectively.

The timing of the agreement is of great significance, as wife Shelley Sterling pushed to make a deal before the NBA league owners’ meeting on Tuesday, June 3, at which Commissioner Adam Silver and company were planning on terminating the Sterlings’ controlling interest in the team.

And in spite of Donald Sterling’s representatives having stated their client’s desire to hold on to the Clippers “to the bloody end,” it appears that Ballmer will be the new principal owner of the Los Angeles franchise.
Should the deal go through, the $2 billion price tag would be the second-highest amount paid for a sports franchise in North American sports, falling just behind the 2012 sale of the Los Angles Dodgers for $2.1 billion.

Photos: New Condoms Invented, Shaft Left Open And Only Tip Of Penis Is Covered

A new condom has been invented and it promises to improve sensitivity to the maximum and is said to be stronger and safer.

LA-based Charles Powell invented the Galatic Cap Pregnancy Prevention device after his friend contracted HIV.
The Galatic Cap Pregnancy Prevention is designed to cover the tip of the penis and leave the long shaft exposed and it comes in two parts, a polyurethane adhesive film  and the cap that stay on top of the penis to trap the out rushing sperm.
Mr Powell says that the polyurethane part is like a second skin and can be worn for several days without taking it off, He said you can even wear it while urinating and bathing.
He explained: When a man wants to have sex, he peels off the paper backing on the cap and sticks it to the polyurethane to securely bond the two and trap semen. He insists the device, which is transparent, will stay on for the duration.
He believes his product will solve the age long problem with condoms , the lack of sensitivity.
However critics have come out to suggest the condom wont help stopping the spread of sexually transmitted diseases.
A clinical director Jason Warriner told Mail Online: 'This will not prevent the spread of conditions such as HIV or herpes as the whole penis is not covered
'It may be suitable for a couple in a long-term relationship but not as a barrier to STIs. 'There is also the risk that the cap may leak, exposing semen.

10 Things That Make A Girl Beautiful Instead Of Hot

Beautiful. It’s a powerful word, one not thrown around as frivolously as hot, pretty or any of the hundreds of words we’ve come to describe women, debasing their worth to nothing more than the symmetry of their face and the fullness of their lips.
It’s a word that holds power and prestige far beyond that of any other adjective. It’s a sacred word, one kept for those who truly can’t be described any other way.
It’s a word that chases women to plastic surgery and extreme diets. It’s the base of all women’s desires and lifelong struggles.
But isn’t beautiful about so much more than looks? Isn’t it in that extra thing — that thing that makes a woman beautiful instead of hot?
We’ve already debated the differences between hot and beautiful, but we never really answered what exactly makes a woman beautiful — what dictates a woman’s right to that elusive status, what embodies that strong adjective we hold to such high regard?
By now we’ve learned that looks are in the eyes of the beholder and there is indeed a somewhat mystical quality of the soul that can turn a beautiful face into an ugly one.
People who have “beautiful” exteriors can begin to look ugly after you get to know them, while someone with a somewhat “average” face can become the most beautiful person you know, proving that beauty isn’t just a façade, but an iridescent quality that is not solely dependent on one’s gene pool.
It’s the quality that elevates a woman from just hot or sexy. It’s in the way she walks, talks and presents herself. It’s the way she radiates from the inside, out. It’s her soul and her spark and that thing you just can’t put your finger on.
It might be the girl you don’t notice at first, the one who doesn’t always stand out. It’s the girl you need to get to know, whose beauty becomes more defined with every conversation, every glance. It’s a word that describes women who can’t be classified as just hot.

Her passions define her more than her looks

There is nothing more beautiful than a woman with passion. A girl who gets excited about things, lives for things and holds things close to her heart is a girl worth knowing.
She’s the girl you’d rather talk to in bed than take to bed. Because passion is contagious and watching someone get excited about something is the most beautiful quality you can find in someone.

She shows you her real face

Women have the right to wear makeup and there is nothing wrong with that. However, a beautiful woman doesn’t feel the need to hide behind it.
A beautiful woman does not do anything for anyone but herself, whether that means wearing makeup or going barefaced to work, she makes sure you know that she does not owe her looks to you.

She doesn’t chase the limelight

A beautiful woman doesn’t fight for the limelight, but is naturally endowed it. The allure of the beautiful woman is that she does not need to work hard or fight for attention.
She is confident and humble, which usually presents a mysterious quality that attracts people more than outlandish gestures and cries for attention. She doesn’t take away from others or place her worth on how many people she’s talking to.

She knows how to talk

There’s nothing worse than a woman who doesn’t know how to use her mouth. A woman who knows how to speak her mind intelligently, who can captivate you with her words and opinions proves that there is nothing more beautiful than intelligence. Smart is sexy and words have the power to turn any girl into the woman of your dreams.

She can go it alone

A woman who doesn’t need a man is a woman who is confident — and confidence is the key to real beauty. A woman who doesn’t need the approval of others radiates with a security and poise that elevates her from the status of just another hot face.
Because being a woman isn’t about needing a man, and a beautiful woman understands that she, herself, is enough.

She’s tight-lipped

There’s nothing more intriguing than a woman of mystery, one who keeps her affairs private and those unnecessary words to herself.
Because there is nothing uglier than people who talk just to hear themselves speak. A beautiful woman is full of surprises and becomes more beautiful the more time you spend getting to know her.

She bends over backwards

Is there anything more beautiful than selflessness? Beauty is found in those who care about more than just themselves.
A truly beautiful woman is compassionate and caring; she will never hesitate to blow her cover by showing that she cares. Hot girls play with your heart, beautiful girls mend it.

She’s open

Beautiful women do not limit themselves. They are open to new ideas, places and people. They do not shy away from things because of stigmas and fear, they are beautiful in their boldness and their open minds.

She’s got soul

There is such a thing as people with ugly souls and we’ve all met at least one person who proves it. A beautiful woman radiates not because of her tinted moisturizer or glossy hair, but because of that something inside her that just makes you want to be near her.
Hot girls don’t need to you show you their souls, beautiful women attract you with theirs.

She’s got that thing

You know that thing, it’s the thing you just can’t place. It’s something that you can’t put into words, let alone describe to your friends.
It’s the special something about her that you can’t place because you’ve never seen it before. It’s the defining quality of the beautiful woman, the thing no one can ever completely describe.
